Cowboy Goulash
Looking for a quick delicious dinner idea? Well the search is over, it’s Cowboy
Goulash. When I was younger my mother
used to make this for us and we always loved it. In college I made it for friends and sorority
sisters before a big cram session for midterms and finals. Currently Cowboy Goulash is one of my Hubby’s
favorites. It’s always a big hit, and it’s
sure to be with your family.
Recipe
What you’ll need:
1 lb. ground round
1 cup bell pepper
1 cup onion
1 clove garlic minced
1 can petite diced tomatoes
1 can Rotel (you can substitute the petite diced tomatoes
with 2 cans of Rotel if you like things spicy)
1 can Whole Kernel Corn (drained and Rinsed)
1 bag or egg noodles
Putting it all together:
Prepare noodles according to package directions
While the noodles are cooking in a skillet over medium high heat
begin heating onions,
peppers, and garlic
Add in ground round and cook until browned
Drain noodles and return to pot
Add browned beef mixture to the pot
Add in cans of tomatoes, and corn into pot
Simmer on low for 10 minutes to allow flavors to mix
together

I love making goulash, but I've never had Cowboy goulash! This sounds really good!
I love to make and eat dishes like this. The mix of flavors just make it so much fun to eat.

Yumm! I've always loved goulash. It's definitely one of our favorite "go to" comfort foods. I've always used elbow macaroni, but I'm seriously lovin' the idea of the egg noodles. And the corn? Even better still! I'll be bookmarking this one for sure. Thanks for sharing it!

My mom use to make something very similar to this except she added a pkg. of either taco seasoning or chili seasoning mix to it, I can't remember which. I'll have to try this. Thanks for sharing.
Chilli seasoning would give it a very different flavor. It might be great for fall or winter. Thanks for stoppin' by.
